Greens, Beans, Country-style Pork Ribs
T: This was some quality country food.
A: you’re full of nice comments even amongst the negative aspects of this food.
T: Really the collard greens stood out for me. They are one of my favorite veggies.
A: Yeah the collard greens were rockin, but the red beans and pork ribs could have been cooked a while longer. It’s not that the pork rib was undercooked, but it wasn’t falling off the bone, which is how I would have liked it to be.
T:The meat wasn’t quite as tender as it could have been, but it was tasty. The beans were nice and spicy.
A: redbeans aren’t my favorite kind of beans in general.
T: nor mine… I’m a big fan of navy beans, and limas.
A: the large dried lima is my favorite.
T: I’m a big fan of baked beans. What kind of beans are used for baked beans?
A: navy beans.
T: well, navy beans are definately some of my favorites.
A: I like navy beans, but I don’t know that it’s one of my favorites. I’m particular about my beans.
T: Amanda, I have a question to ask you, but I don’t really… I’m not good at this sort of thing… do you… use beano?
A: why, yes, Tyler, sometimes I do use beano, and I’m not ashamed.
T: I give the collards a 9.0/10. I give the rest of the meal an 7.5/10.
A: I give the collards an 8.0/10, and the rest of the meal I give a 6.7/10.
