Almost as good as a Hawaiian burger... almost.

We’re eating kinda-Hawaiian chicken sandwiches made with grilled soy-pepper jelly marinated chicken tenderloins, bacon, asiago cheese, juicy grilled fresh pineapple slices, red onions, spring mix and mayonnaise.

There is a bar and grill a few blocks from where we live that serves a delicious Hawaiian hamburger. The cheese, burger, pineapple, teriyaki sauce and mayo combine to form heaven in a bite. I was craving said burger the day I made this little number. Instead of making it a hamburger I when for a slightly healthier option and made it with grilled chicken tenderloin. If you really want to keep it healthy, substitute the bacon with ham or Canadian bacon and instead of mayo brush the buns with more of the soy-pepper jelly sauce. Also, if you are feeling REEEEAAAALLY lazy you can just use a bottle of teriyaki sauce to marinate the chicken rather than making the soy-pepper jelly sauce. In my opinion, chicken is never as good as a burger but this hit the spot and staved off my craving for the day!

Happy New Year! As 2009 rolled to a close we decided that rather than staying up late and ringing in the new year we would wake up early and head over to our friends Nicole and Justin’s house for a day long celebration of watching two back-to-back bowl games followed by some serious rocking out (to Rock Band of course).

One of the perks of being real-life friends with food bloggers is that you get to eat what they’re cooking! We decided that since Nicole was making some kaiser rolls for her blog, I would make some complimentary pulled pork to go on them. Normally I would have gone crazy and done some untraditional seasoning for the pork roast, but when the time rolled around for me to make the pork I was in a classic, nostalgic kind of mood. Thus here is my recipe for classic southern pulled pork. If you have a smoker, then by all means, please use it! Unfortunately I don’t have a smoker so the recipe below is using the low and slow oven-roasting method. If you end up giving this recipe a try, we’d love to hear how it worked out for you in the comments section below!

Sandwiches can be the most simple thing to cook and often times one of the most satisfying things to eat. At least that’s the p.o.v. in our house. That’s definitely the case with this sandwich! It was a breeze to make yet soul satisfying to devour. Tyler said it was ranked right up next to the Father’s Office burger – his favorite burger of all time. Damn high praise indeed! Caramelizing onions takes quite a long time but you can make the onions several days in advance and store in a sealed in the fridge until ready for use. We hope you guys make this sandwich and enjoy it as much as we did!

For the “filling” of the sandwich we layered crispy, smokey thick slices of bacon, brussels sprout leaves that were sauteed in the bacon drippings, and herb-y sauteed shitake mushrooms. To finish the plate, we added a fresh and vibrant slow-roasted tomato and tarragon vinaigrette.

T: and we’re back.
A: with a bang, yo! we’ve been cooking tons of good shiz lately (although not posting much), but this…this was out of control!
T: this was beyond all control, and sooo tasty. Scallops are great by themselves, but these were above and beyond plain scallops. Oh yeah.
A: seriously! first off, you have to be out of your mind if you don’t like some huge-ass sea scallops… ditto with bacon –
T: preach on, sista!
A: but take those two great items, put them together with some other really tasty ingredients like bacony brussels sprout leaves, herbalicious shitake mushrooms, and to top it all off an insanely good, uber-fresh tasting tarragon tomato vinaigrette. mmm Mmm MMM!
T: Seriously that tomato sauce was one of my favorite parts. I would have drunk it. I would have drunk it until I got sick.
T: ooh, we’ve been out of the rating game for a while. Umm… I give this ditty a 4.9/5.
T: it was ridiculously good. If the tomato sauce had not been so good the overall score would have gone down, but it was all just absurdly good. So, what do you give it?
A: i pretty much agree with your loco rating… i just can’t go that high. I give it a 4.78/5. it was un-freaking-believable. the scallops were perfectly cooked and each element just really worked. it’s a shame sea scallops are so expensive.
T: Well i could live longer off of it than I could off of Chelsea’s bread. So uhhh.
A: uh, yeah. so, uhhh. that’s what i thought! anywho… what did you think of the tomato soup… mmm with pesto and truffle oil… mmmm.
T: I thought it rocked the house. It wasn’t too acidic, and it tasted fresh and bright, and it had a good texture… not overly pureed. The truffle oil was not very pronounced, which was probably a good thing… just a hint. I dug it. I give the meal a 4.4/5. It could have scored higher, but it lost difficulty points. Grilled cheese is one of the 5 or so things that I can cook (including instant oatmeal), so it’s not as impressive to me.
A: um, like, could you have cooked the roasted tomato soup?!? that was, okay, that was easy too. you probably could have cooked that.
T: It would have been quite a challenge. I actually included difficulty points for the soup, though… without that the score would have been lower. So what do you rate it?
A: well i think anything that deserves a national month of celebration is nothing to scoff at! I give this grilled cheese a 4.55/5. It gets extra points for me for being a damn grilled cheese! so there! that and i really dug the soup and sandwich combo. it’s a standard classic that just can’t be done wrong… even by hideous cafeterias… although i can’t really eat campbell’s tomato soup.
T: That reminds me, I need to check with my boss about getting some time off for national grilled cheese month. Shit.
A: dude! i can’t believe you haven’t done that yet! we totally have that grilled cheese meditation retreat scheduled for the 25th – 30th.
T: I know, and I haven’t even picked out my costume for the big grilled cheese costume party on the 22nd. I’m thinking I’ll be your basic white bread/cheddar grilled cheese.
A: that’s perfect for you… you’re total white bread.
T: you’re the one that has to date me.

Not your everyday brownbag

For a sunny sunday afternoon lunch we’re eating sandwiches made with rosemary and garlic marinated grilled leg of lamb, roasted red peppers, grilled onions, micro greens, and herbalicious spicy lime vinaigrette on olive oil and rosemary bread. The sandwiches were served with a side salad of sliced orange and yellow tomatoes and micro greens with a lemon vinaigrette.

T: this sandwich was extremely tasty. You make sandwiches so much better than I ever could. You put so much on them… when I make a sandwich it’s like.. bread, meat. maybe some cheese. Scarf it down. And that’s it. Terrible every time.
A: heheh that’s just because you don’t care enough to make it more. You know what tastes good on a sandwich. it just takes time to marinate and grill meat! you’re too busy doing work to break for making a killer sandwich!
T: Well, you definitely have a gift for it. Although, I will say, I don’t know if pieces of steak-like meat are my favorite for a sandwich. They don’t chew with the same ease as the rest of the sandwich, and I end up pulling out large pieces of meat with my teeth, leaving a bready sandwich behind. That said, this was still a very very tasty sandwich.
A: yeah, that problem would have been solved if i had been using a sharp knife to slice the meat. as it is, my knife is in dire need of professional sharpening. My steal just ain’t cutting it. I do think that the sandwich was yummy. I particularly enjoyed the lamb! i couldn’t help snagging pieces of it while we were photographing. I could still probably eat a couple more slices. Lamb is definitely my weakness.
T: So if you had a sharper knife you would have cut it thinner?
A: yup.
T: how thin would you have gone?
A: probably only half that thickness. i would still want there to be some heartiness to the meat, i would have made it two layers of lamb instead of one, too.
T: That probably would have gotten along much better with my chewing problem.
A: maybe you should just get new teeth. it seems like they might be wearing thin. or maybe you could have your teeth sharpened, rather than me having my knife sharpened.
T: my teeth don’t need no sharpening! They can cut a penny in half.
A: bullshit! if that’s the case, we should record it and put it on youtube for the world to see. surely you’d go viral.
T: I’m trying to stay out of the spotlight.
A: don’t be shy mister T! you don’t want the public’s affection?
T: I’ve had plenty of the public’s affection and I can say it’s not all it’s cracked up to be. So what do you rate the sandwich?
A: Hmmm, i think i’ll have to give the sandwich a 4.1/5. it was good. not the best sandwich ever, but good. But if i were to rate the lamb alone, i would give it a 4.6/5. The lamb rocked my casbah.
T: I give the sandwich a 4.2/5. I thought everything on it was very tasty, but the meat didn’t seem to belong. By itself the meat was tasty, but it wasn’t working for me in sandwich form.
A: oh well! we can’t agree on everything! i thought the meat worked great with the other ingredients in the sandwich, even if it was a touch on the chewy side.
T: I thought it worked great with the other ingredients, too. Flavorwise I can’t say enough about it. I guess I’ve always had issues chewing steak, though. This is really nothing new. Maybe I have inadequate saliva.
A: we live in the land of needless cosmetic surgery. do you think there’s a place we can go to get your salivary glands enhanced?
T: ummm no. Crackhead.
