Let the sausage making begin! Using our newly acquired meat grinder we’ve made our first sausage – and used it to top a pizza. Our pizza consisted of a thin crispy crust layered with homemade basil pesto, caramelized onions, sauteed portobello mushrooms, browned and crumbled homemade sausage, buffalo mozzarella, and a light sprinkling of of tomato basil feta. After baking we garnished the pizza with torn leaves of basil to add a level of freshness.

T: it’s so exciting that you’re making sausage these days! Can’t wait till the next batch.
A: hmm… well it’s definitely exciting that i made sausage! but i’ve only done it once now. i’m really looking forward to the next batch. just think of all the spice combinations i can try! ooo wee!
T: you know what would be really good? Italian sausage. What’d you think of that?
A: i think you’re right on. i totally dig some italian sausage. did you think this particular batch of sausage reminded you at all of italian sausage?
T: no not particularly. Was it supposed to?
A: not really, although it had the fennel kicking like italian sausage does. that’s pretty much the main similarity.

T: Ok, so we’ve talked about the sausage, but the pizza as a whole really stole the show. That pizza was goood. Mmmm. I love pesto. I give the pizza a 4.7/5. If I still had the stomach of a 25 year old I would have eaten every piece of it.
A: hehehe wow. your stomach must have really deteriorated in the past year!… you are only 26 you know!?!
T: yeah, sadly, my stomach has indeed gone downhill since my younger days. Damn coffee. It’s some harsh stuff, yet oh so necessary.
A: true dat. i could have really used some of that this afternoon! but i think i could use a slice of this pizza even more… i am sooo hungry. i give the pizza as a whole a 4.68/5. it was freaking good. the crust came out nice and thin and crispy. the buffalo mozzarella added a nice flavor. frankly, it was all good. i could seriously go for a couple of slices! why god?!? why can’t i just have pizza magically appear at my command?!?
T: it’s going to take at least half an hour to have pizza magically appear. And it’s going to suck compared to this pizza. I would suggest fantasizing about something else, such as winning american idol or something.
A: or making more and different sausages!
T: yes. much better idea. forget what I said.

For the LSU game we went wild and made some homemade flatbread-like pizza that was to die for. The pizza-flatbread creation was made with homemade dough and topped with sage-garlic butter, caramelized maui onions, fresh slices of jalapenos, creamy brie, danish blue cheese, and crispy thick sliced bacon. It really doesn’t get much better than this.

You can’t resist meA: man, if people think that we eat only the stuff we post they must surely be worried about our health! this was one rich bitch.
T: I don’t care. I will gladly take a decade off my life expectancy if it means eating this on a regular basis. This cheesy bread/pizza thing was unreal. I would give up entire food ethnicities before I gave this up. It was really really tasty. Seriously.
A: agreed. i would totally give up eskimoan food for this…. at least with my lack of knowledge of eskimoan food. this was some seriously outrageously good game day food.
T: yeah. for real. If we still had some I would bury my face in it right now.
T: you interrupted me. I was still going over this loaf of delight in my mind. Ok, so, now that we’ve gushed for a few minutes, do you have a rating for it?
A: man, i really want to go crazy high with my rating but… i dunno. I need to stay sane. I’ll give it a 4.85/5. It was really effing good. seriously. it put together some of my all time favorites all in one home made bready dish. if it had had lamb lolly pops and crab cakes it could have gotten a 5.
T: yeah, this thing deserves an incredible score. I give it a 4.96/5. It was tops. There’s not much else to say about it. I recommend that anyone out there in internet-land who can follow a recipe, make this. now.
Crispy, soft, cheesy, sausagyT: I’ll tell you what I liked about this pizza…
A: da…
T: all the cheese on it!!
A: wooo hoo! cheezy pizza! yeah. i had lots of cheeses to use up. fresh mozzarella, fig goat cheese, parmegiano reggiano. mmm. i also dug the spicy italian sausage.
T: I was about to say exactly that. That sausage kicked ass. This was a great pizza. I could have probably had some kind of spicy pepper on it since I’m addicted to spicy peppers on everything I eat. It was a delish pizza though.
A: i definitely thought about throwing some banana peppers or jalapenos on there, but i feel like everything i make has jalapenos in it!
T: everything you make has salt. Everything you make has meat and/or cheese and/or a vegetable. So, what’s wrong with everything having a spicy peppah?
A: hehehe absolutely nothing! i’m a mega spice nut. i could eat things that hurt for every meal and be happy… i just like to give a sister some options.
T: what sister are you giving options to? I’m confused.
A: the sisters who be reading this here thing. not everyone likes heat like you and i do! sometimes you gotta tone it down a bit.
T: What!? Those crazy hoes out there in internetland aren’t eating this stuff! We are. Try giving a brother some options here.
A: shit, i do! here’s your options: eat what i put in front of you or go get some damn take out!
T: Oh you love to hold that over me don’t you… dammit. So true. I’m a dependent.
A: only a food dependent. and you know i’m just kidding. i do think this could have used some peppers. but considering it didn’t have any heat, i still thought it was quite tasty. the second pizza that came out was a little better than the first… crispier, you know. i miss my pizza stone very much! it’s so much easier to achieve the crispy crust with the stone.
T: Yeah, it’s just a shame the oven is too small to fit your pizza stone… or any pizza stone for that matter.
A: you know, we could always go pick up a couple ceramic tiles and use them rather than a piece of ceramic made for baking. then we could at least fit a little stone in there! hmmm. i think this might be the first homemade pizza we’ve ever blogged about!
T: really, wow. Hard to believe. I give it a 4.4/5. It was super-good. It’s got some room for improvement though. What did you think?
A: i agree with you. it was tasty… but definitely room for growth. i thought the whole thing need a little sodium, too. the second pie was far superior to the first (and the left overs were great). I give it a 4.1/5. we’ll be seeing home made pizza again before too long, and i can guarantee that it will be better than this little ditty!
T: ahhh yeah, that’s the kind of confidence I like to hear. I believe you, too. Back to what you said about the leftovers being great. Are you talking about the little stuffed bread you made from the leftover ingredients? Because that was definitely tasty.
A: actually i was talking about the two slices of leftover pizza that i ate for breakfast the past couple of days! the stuffed bread was really good, imho. better than the pizza even!
T: I actually agree with you there. I would have given the stuffed bread a 4.55/5.
A: i would have given it similar! it’s a shame we didn’t get photos of it for the blizog.
T: ahhh, sadly so much of what you make escapes without a single photo.
A: one day we’ll have the time and energy to do it all!
T: yeah when we start taking speed.
A: or retire
We finally made it to a restaurant that has been suggested to us time and time again….and boy was the reward great. Man that was some pretty damn good pizza!
T: yeah it really was. i enjoyed every aspect of it. and it was huge!
A: my god. I don’ t think the pictures do it justice. It really was sooo big. I mean, i know how large 18″ is when i think about it, but that just seemed… like… well… like larger than my mind sees 18″, i guess!
T: yeah, big. Each slice was big too, but it was easy to eat nonetheless. I guess the cheese held everything together pretty well.
A: yeah, there was a perfect topping:crust ratio going on. enough toppings so you thoroughly taste all of them yet the crust wasn’t being weighed down.
T: this pizza had one of the thinnest crusts of any pizza i’ve had. it was only a few millimeters thick!
A: i think that’s trademark ny style pizza baby. I know we can’t really compare anything in san diego to some of the top places on the east coast, but given that i’ve spent the last 7 years in exile in the deep south, with no really good pizza, this was the bomb, yo!
T: this was indeed the bomb. i’m about ready for leftovers!
A: Me too! as soon as this blogalicious post is done, you can bet i’m gonna be hitting up a slice or two. I give this pizza a 4.7/5. I guess rumors can be true sometimes, because this really was the best pizza in S.D.
T: I’ll give it a 4.6/5. It was superduper. Did we ever mention what was on the pizza?
A: I don’t think so. I think we got so caught up in how awesome it was and forgot all about giving a good description. We choose to put our own toppings on rather than run with a suggested set of them. We got fresh tomato, pesto, broccoli, garlic, and pepperoni. mmm mmm mmm
T: I thought it was so unusual how they did the broccoli!
A: definately… i guess it was frozen broccoli that they blanch for a little to long and it feel a part – or they meant to have it be kind of pulverized
T: i imagine it was intentional.
A: i know i know, but it was weird. good weird, but still weird
T: very strange indeed. So, which do you prefer, New York style or Chicago style pizza?
A: i can’t really choose one over the other. When i’m in the mood for something bready and heavy, i want a good deep dish. but there are definately a lot of times i want a thin crust that show-cases the toppings (aka ny pizza).
T: if you were captured by a band of masked men (and women) and they gave you the choice of Chicago style or New York style, and after you ate it they were going to shoot you. In other words, this is your last meal. What would you choose?
A: i’m saying each is a totally separate species for me. it would really depend on what i was in the mood for in that specific moment. How about you, same scenario?
T: bang! you just got shot and you didn’t even get to eat your last meal. these kind of people want answers, they don’t care about what your mood is.
A: hehehehhe you are too funny! i could have made a decision if i was in the moment. since i’m only here talking to you, i didn’t feel the immense pressure to follow through with a decision.
T: I would go for the thin crust NY style if it were my last meal. It would give me more topping-to-bread, more grease perhaps. Now, if the scenario were… if you were stuck on an island with an unlimited supply of just one type of pizza, which would it be… I would choose Chicago style. Then I would want the extra bread.
A: definately, more sustenance, chicago is definately better for the island scenario. but it would still be a toss up for my last meal
T: So… I was surprised about how good the pizza at BJ’s was.
A: i know, when we recently went there for the first time i went in with my heart guarded, expecting to be dissapointed. i was pleasantly suprised. it was pretty darn good.
T: yeah I was expecting mediocre crap. it was very good. Had a much thicker crust than the Bronx Pizza. Very different but very good, too. We’ve been doing well on pizza lately… do you have any plans of making pizza anytime?
A: i suppose it’s about time, although i hate that i left my stone in baton rouge. it’s really been a de-motivating factor for me making breads and pizzas
T: yeah we might just have to do something about that
A: Aw YEAH!

Kwaherini mabibi na mabwana!
