Asian-influenced Tuna Salad

Tonight we had spice-rubbed grilled tuna served over a bed of shredded cabbage tossed with a sesame rice wine vinegarette and served with marinated grilled zucchini and red pepper.
A: Oooof! I’m full.
T: full from the tuna and veggies?
A: uh…uh… um… yeah. uh. from the…uh… tuna and veggies (or mexican food we just ate)
T: so, yeah we actually didn’t eat this tuna tonight. We just had mexican food. It’s true. But I’m pretty sure we both remember the tuna quite well.
A: I do, indeed. I remember how light and refreshing it was (especially in comparison to the mexican lead in my tummy now!)
T: yeah it was damn good. Much better than the torta I just ate. The tuna was moist and had a delightful marinade going on. What’d you do with it?
A: I actually didn’t marinade it at all. I gave it a little spice rub. I think i used ground ginger, garlic, ground mustard, nutmeg, S&P and maybe something else, but no liquid. It definately had an asian feel to it. I also made a sesame and rice wine vinegarette for the veggies.
T: I liked it. I love cabbage, too. It was nice to eat a lot of it instead of the normal tiny dose that we get in fish tacos around here.
A: for sure, man. The veggies were nice and crispy. I don’t know why we don’t eat more cabbage
T: yeah. cabbage is under used in my opinion, and iceberg lettuce is way overused.
A: Do people still use iceberg lettuce? Iceberg lettuce is like, so 20th century.
T: yeah, and earlier. The 21st century is all about cabbage. For a while it looked like spinach was the next iceberg, but I’m here to tell you that spinach is sooo early 2000’s. It’s 2006 and cabbage is in.
A: mmm…caaaaabbbbbaaaaggggeee! (and field greens) hooray for the death of iceberg! hold on….did iceberg die?
T: Like the polar ice caps, iceberg lettuce is on it’s way down.
A: nice. now we can blame green house gases for the melting of our lettuce too…. okay, that didn’t make much sense.
T: i like it, though.
A: Sooooo….do you think you remember the meal enough to give it a rating?
T: I give it a 4.3/5. It was tasty. What else can I say.
A: What else needs to be said, really? I give this one a 4.125/5. I thought it was quite nice on the palate as well. My main problem with it was the plating. It was just such a crowded plate. It could have used like… i dunno… 1/2 the veggies on the plate.
T: I guess I could see that being a good idea. Although then we would have needed more plates!
A: true dat. I wish i had ring molds so i could make stuff nice and stacked and tidy. I have used a mini spring-form pan to mold stuff before but I would have needed something deeper than that for this.
T: I was thinking you already had a ring mold. Huh. Anyway, what’s for dessert?
A: EXTRAORDINARY DEEEEESSERTS!
T: We eat there kind of a lot. I wonder if there are any other places with killer desserts around here?
A: maybe we should ask beth, the zen foodism woman, she doesn’t like extraordinary desserts so maybe she can offer up an alternative.
T: I know there must be plenty of restaurants in the gaslamp district with absurdly delicious desserts.
A: for sure, now all we need is money to go out and find them! (or a good tip)
T: if anybody has either, let us know!

In a pinch, I’ve used a medium-sized tin can (with both ends removed and cleaned well) as a pinch hitter for a ring mold. Just sharing the love.

Marianne, I can’t believe i’ve never thought of that before! what a seriously good idea. And here i thought i was in with the ghetto stylings of substituting items around the house for those i can’t afford! I bow to the queen. this is a great idea!

I agree about iceberg lettuce…I NEVER buy it. But I’m going to challenge your assumption that cabbage is the leafy green of choice for the 21st century because I much, much prefer spinach. So there!

Hey guys, thanks for the link - I will add you too! Check out my blog for comments on Heaven Sent. It was “ok” - I’d go again if in the neighborhood. I like Extraordinary Desserts, but it is a little overrated. Problem is, they don’t have a lot of competition. Just Desserts in Kensington is also sort of “eh” - we used to live in the neighborhood and gave up on them after a few visits becasue of bad service. I’m a little out of it right now, been up since 5 AM for work, but I will mull it over and try to think of some suggestions. Ciao!
