Aunt Virgie’s Pineapple, Marshmellow, and Cheddar Congealed Salad

One week ago we were eating Aunt Virgie’s infamous pineapple, marshmellow, lemon, and cheddar congealed salad. The salad was topped with maraschino cherries.
T: This salad has always been the redheaded stepchild of all my family’s traditional dishes. Most people are not entirely comfortable with putting cheese and marshmellows in a gelatin salad. I don’t blame them, I felt the same way for many years. However, I’ve learned that not only is it ok, it’s a great thing to do. The marshmellows are very moist and light, and therefore not overwhelming. The cheese adds just the right contrast to balance out the sweets. Good job Regan, and thanks for carrying on a family tradition! I give this one a 9.2/10.
