		<description>Just wanted to say that this was the first cheesecake i have ever made and i have made it 3 times in the past month and a half.  BEST EVER!!!  last one was with pecan shortbread crust with caramel sauce and homemade candied pecans!! what a great cheesecake recipe to have fun with! Thanks.</description>

		<description>hi rochelle! you could make this oh... 48 hours in advance and keep it refrigerated the whole time and it should be fine. frankly, it will stay good refrigerated for the better part of a week but the quality will start to decrease the longer you go. 

also - you don&#039;t have to use a nonstick pan for the caramel... just expect the clean up to take a while longer! ;-)</description>
