Juice &amp; zest from 1 lemon
1 tbsp dijon mustard
1 tsp honey
1 garlic clove, minced to a paste
1/3 -1/2 cup canola oil (depending on how tart you like it)
fresh herbs, chopped(optional)
kosher salt and freshly cracked black peppers

Add the first 4 ingredients into a mixing bowl. Whisk until thoroughly combined.  Continue whisk constantly while slowly drizzling in the canola oil. Taste the vinaigrette - if it&#039;s too tart, whisk in more oil. Also, adjust the season, to taste, with kosher salt and freshly cracked black pepper.  Use immediately or refrigerate, covered, for upto a week.</description>
