I made pineapple salsa a couple of weeks ago.  The recipe was similar to yours, but I added a bunch of fresh ginger.  I served it over Jamaican jerk seasoned chicken breasts with savory roasted sweet potatoes on the side.  The whole meal killed, but the salsa was probably my favorite.

Thanks Garliclover!  We will definately try the dish @ Lotis.  (anything to get tyler to like eggplant.)  I think we have it easier than blogs where just one person is working on it.  It makes it fun to have a team activity.  It doesn&#039;t hurt that we&#039;re both passionate about it either.  one day we might loose momentum, but for now....</description>

Oh and if you want to try some really good eggplant check out the dish at Lotis thai- it&#039;s one of the best eggplant dishes I have ever tried.
