I made pineapple salsa a couple of weeks ago. The recipe was similar to yours, but I added a bunch of fresh ginger. I served it over Jamaican jerk seasoned chicken breasts with savory roasted sweet potatoes on the side. The whole meal killed, but the salsa was probably my favorite.

Wait. Why am I still cruising your site? Didn’t I say that I was tired like an hour ago? DAMN YOU, BLOGGERS! G’nite.

Thanks eddie! this is one of the posts that the mozilla bug ate the recipe for. pineapple salsa is very close to mango salsa and both go especially well with latin foods. you’re right: fresh chips are a must, we were just to lazy to buy/make any!

Can’t wait to try this salsa, picture looks great! Found a recipe for mango salsa on kathyireland.com http://www.kathyireland.com/Acafe/Food/Entree/index.htm. Goes great with spicy latin foods. tasty combo of flavors and very colorful. always enjoyed by everyone.
Fresh chips are a must!

Recommendation for stale tortilla chips:
Pour them into a glass bowl and microwave them for about 30 seconds to 1 minute. It gets the oil going so it tastes fresher.

Scott: Thanks so much! you should check out some of our older posts… it’s definately been a learn-as-you-go process. some of our older stuff is just atrocious!

Thanks Garliclover! We will definately try the dish @ Lotis. (anything to get tyler to like eggplant.) I think we have it easier than blogs where just one person is working on it. It makes it fun to have a team activity. It doesn’t hurt that we’re both passionate about it either. one day we might loose momentum, but for now….

I was so happy to come accross your guys’ blog. It is just stunning, the photography amazing and the recipes look great. Such commitment from the two of you- I know only too well how hard it can be to keep posting each day.
Oh and if you want to try some really good eggplant check out the dish at Lotis thai- it’s one of the best eggplant dishes I have ever tried.
