this is one of my favorite comfort foods to prepare. I usually stuff tomatoes, basil and mozz under the skin or ham and swiss, my play on cordon blue. sausage under the skin sounds fab, I think I will try it next time. Thanks Amanda

thanks scott :-) sometimes chicken just has to tell it like it is

thanks aria! must...roast... chicken... regardless of sweltering heat! actually it hasn't bee too bad for us since we only live a couple blocks off the coast. we've been so lucky!

hehehe nicole, i have like... i dunno, four whole chickens in my freezer from the same experience! i go to the store, buy the bird, never get around to eating it, freeze, then when i want to cook one i don't feel like waiting for defrosting! it's a vicious cycle!

thanks cheila! we use a canon digital rebel with a macro lens for all of our photos.

talk about drool worthy, leena! just reading the words mexican chorizo chicken makes me salivate! mmmm, really, sausage and any other meat is a great thought.

ford, do you live in socal? you can totally come to dinner if you do! of course you can post to us and thanks so much for giving us a shout out.

heheh i know, denise. that would be so wrong! thanks!

Moulding a soy product and stuffing it with more soy products will make a ton lots of soy! I think my kidney will suffer from too much protein.
Anyways, great dish (: You're getting more and more creative Amanda!

This looks pretty kick ass, guys. I really dig the sausage and chicken combo, but I never even considered putting sausage under the skin! It reminds me a dish I make where I stuff chicken breasts with sausage on the inside and slather it with garlic butter on the outside...three words: Mexican chorizo chicken.

Yet again another drool-worthy post!
