Simple Tomatillo Salsa
10 tomatillos, husked
1/3 of a yellow onion, roughly chopped
2 cloves garlic
1/3 cup cilantro leaves
1/2 - 1 1/2 fresh jalapenos, roughly chopped (vary depending on how spicy you like it)
juice from 1 1/2 limes
2 tbsp water
kosher salt and freshly cracked black pepper
Bring a large pot of water to a boil over high heat. Once boiling, add tomatillos and cook for about 1 minute until blanched. Remove from water. Roughly chop the tomatillos and add them to the bowl of a food processor or blender. Add all ingredients except salt and pepper to the food processor. Process until fully pureed. Season to taste with kosher salt and freshly cracked black pepper. Will keep refrigerated for several days. Enjoy!
