Amanda's Version o' Gremolata

1/4 cup finely chopped fresh flat-leaf parsley
1/8 cup capers, finely chopped
zest from 2 lemons, minced
1 garlic clove, minced
freshly cracked black pepper

Add first 4 ingredients into a bowl. Stir to combine thoroughly. Season to taste with freshly cracked black pepper. Goes great on anything, especially lamb shanks and osso buco. Enjoy!
