Mediterranean Stuffed Chicken with Pesto Linguini

August 17th, 2005

Baked chicken breast stuffed with artichoke hearts, basil, and garlic herb feta served over fresh basil pesto linguini with sauteed cherry tomatoes and herb-roasted okra.

A: so, they did turn out alright? they weren’t too dry?
T: Dude, they were terrific. They were scrumptious. My first bite was of the noodles. I was delighted. Then I took a quick bite of the okra, and headed for the chicken. My goodness was it delicious. It was fresh-tasting… the chicken was succulent. What can I say, it was delightful.
A: it was rather tasty, although I thought the okra had absorbed a touch to much oil and was a little overdone. but still tasty nonetheless.
T: I give the meal a 9.0/10. It was up there.
A: I’ll give it an 8.7/10. I thought it was quite yummy, but there were definately things I thought I could have improved on.
T: until next time?
A: kwaheri mabibi na mabwana.
